Mutton Masala Briyani – serves 15 people

Yields1 Serving
 3kg Mutton
 Salt to Taste
 2 Tablespoon of Ground Ginger and Garlic
 2 Tablespoon of Rookie mas Hot Masala
 2 Tablespoon Kashmiri Chillie Powder
 1 Tablespoon Tumeric Powder
 1 teaspoon Dhania & Jeera powder
 Mint
 Thyme
 Dhania
 Sprig of curry leaf
 4 Green Chillies
 3 Ripe Tomatoes - Grated
 500ml of Yogurt /Sour Milk
 Dash of Egg yellow food coloring

Marinate all the above ingredients together over night or for a few hours.

4 Cups of Rice Par Boiled, Toss in some egg yellow food coloring and Set aside to cool

1 large Cup Briyani dhall (Masoor)

Steam with a little salt and Tumeric powder and 1 piece cinnamon stick, Set aside to cool

6 Potatoes, halved and colored with egg yellow Food Coloring, Steam, Fry and set aside

2 large Onions, sliced, fried and set aside

In a large heavy base pot, Fry an onion with 2 Bay leaf, 2 Cinnamon sticks and 1 star anise

Add Marinated meat and cook on Moderate heat for about 35 minutes.

Add the Fried Potatoes, Briyani dhall, Fried onions and cook a further 10 minutes,

Sprinkle the Rice on top of the Meat mixture, add blobs of butter over the rice.

Cover the pot with Foil and Place in the oven at 180°C for 45 minutes to an hour

Once done, remove the rice to one half of the pot, or set aside in a separate pot. Dish your Masala and rice separately or serve as desired with Salads of your choice
