Outside Fire – Mutton Curry (c grade meat)

Yields1 Serving
 2kg mutton (serves 10 people)
 1 large onion sliced
 Whole spice (2 cloves, 4 cinnamon sticks, 4 bayleaves, sprinkle of jeera)
 ½ cup oil
 1 tbsp ginger & garlic
 1 large tomato chopped
 + - 6 tbsp mixed masala
 5 medium size potatoes
 Salt to taste
 Dhania to garnish
 Boiling water

Add oil to pot

Add onion and sautee till translucent

Add whole spice

Add washed meat and fry for 2mins

Add ginger & garlice

Add salt

Cover meat in boiling water and let it steam for approximately 90mins to soften the meat. As water reduces keep on adding.

Once 90mins is over and water has been reduced, add masala and tomatoes – cook for 10 mins

Then add potatoes, add boiling water to cover potatoes – allow to cook

Once potato is soft the curry is cooked, be sure to add enough water to make your desired amount of gravy.

Garnish with Dhania
